Taste Ljubljana is not just a brand brigning together popular traditional dishes. A significant part of the project is also in promoting the locally sourced ingredients and contemporary ways of their preparation. At the November Gourmet Finale, another best new taste of Ljubljana will be announced, selected by the professional jury from among the recipes submited in a competition. Last year’s recipe that was awarded as the best new taste of Ljubljana was “Kranjska Klobasa (Carniolan Sausage) in Disguise” prepared by Tilen Kunc.
Culinary huts will be offering selected combinations of the dishes listed below and a variety of beverages (Slovenian wines, beer, coffee, soft drinks, gin).
1. Triple Bridge:
Tris di Tatar (beef, beetroot, sea bass)
2. Dragon Tongue:
Beef tongue sandwich with grated kohlrabi, pumpkin seeds, mustard spread and young cheese
3. Castle Snack:
Ham in dough served with a bread cake, fresh horseradish and horseradish cream with apples
4. Fritters of Ljubljana:
Buckwheat fritters stuffed with red cabbage on crookneck pumpkin cream (along with a slice of roasted duck breasts)
5. Julia's Apple:
Roasted apple with walnuts, honey and vanilla cream
