Ljubljana has held the title of City of Vine and Wine since 1987, while for the last few years a castle vineyard with several thousand vines has flourished on one side of the Castle Hill.

We therefore greet the harvest with a selection of recipes that include grapes – those from the Castle Hill or those that have traditionally (for centuries!) been brought to market in Ljubljana in late summer and early autumn.

INGREDIENTS

1 apple
200g firm grapes
2 celery stalks
100 g walnut kernels
a few salad leaves

Dressing:

lemon juice
1 tbsp mayonnaise
1 tsp yoghurt
salt and pepper

PREPARATION METHOD

Top and tail the apple, cut it into thin slices and immediately drizzle with lemon juice. Halve the grapes. Cut the celery stalks into thin slices. Leave the walnut kernels whole. To make the dressing, mix together the mayonnaise, yoghurt, salt and pepper and finish off with a dash of lemon juice.

Rinse and dry the salad leaves and place in a bowl. Liberally dress the apple, grape and celery mixture with the prepared dressing and add to the centre of the bowl. Top with a sprinkling of walnuts and serve.
